The hotel and restaurant La Torre del Visco is surrounded by its own certified organic farm of 220 acres with over 1,800 olive trees. Since the Roman Empire, olive production has been the most important agricultural activity of this area and our own trees produce the oil we use in our restaurant throughout the year. The heart of our fruity, mellow signature oil comes from our Empeltre trees, the local Aragonese variety, whilst 400 Arbequina trees, a smaller more vigorous variety, add a wonderful extra depth of flavour. We also prepare some of our harvest for table olives.
Depending on the weather, we pick our olives from mid-October until mid-November while many local farmers begin in December, so there are plenty of opportunities for visitors to observe the harvest throughout the season.
Autumn in the Matarranya
The weather at this time of year is usually beautiful with bright sunny days and crisp clear night skies. After the day’s activities, guests can relax by an open fire with a glass of wine from our 15th century wine cellar or, linger in the kitchen to watch dinner being prepared by our chefs in the open kitchen where tips, recipes and stories are shared about food, wine and everything else under the sun.

An introduction to the Mediterranean world of olive oil culture.
Guests will learn about the different varieties of olives, their unique characteristics, the implications of organic cultivation, the pressing process and the preparing of olives for canapés. A guided walk around our organic farm brings participants up close to the sculptural beauty of centuries old olive trees as well as recent, younger plantations.
A practical demonstration of harvesting methods.
This is where guests can get hands on if they want as we compare traditional manual techniques of previous generations to the mechanised processes of today. Then a break for lunch, an al fresco picnic in the olive groves, weather permitting, with freshly baked bread, local cure ham, goat’s cheeses accompanied, of course, by local wine and olives.
A visit to an organic oil press.
We make the short trip to an oil press for the next stage in the harvest. We follow the progress of the olives through the mill right to the end of the process that produces the wonderful, health-giving ‘liquid gold’ for use in our kitchens and dining tables.
An olive oil tasting session.
Led by an expert producer, this fun session guides guests through the different varieties of this natural elixir to identify the distinct characters of each oil and understand which complement different dishes – the backbone of Mediterranean cookery and the secret to Spanish longevity!
Cooking with olive oil.
Join our chefs in our open kitchen and share in their expertise preparing delicious recipes based on olive oil and other seasonal local ingredients that form the heart of our naturally healthy, ‘mar y montaña’ Mediterranean diet.
